AGED VINEGAR OF MODENA
A true expression of Modenese tradition and identity, preserved by one devoted family.
The story of Acetaia La Bonissima begins in 1890 at the trattoria of Celestino De Pietri, where famous drivers and mechanics of the legendary Mille Miglia car race were drawn to hearty meals finished with a syrupy balsamic aged above the kitchen.
Today, four generations later, the acetaia (a vinegar cellar) sits above the De Pietri home, with rows of wooden barrels of balsamic that age alongside their family *heirlooms. It is here that they continue the same traditions that shaped its beginnings: the patience that comes with proper aging, the discipline of adhering to standards, and the devotion to continuing the family’s legacy. This is the reason Acetaia La Bonissima remains one of Modena’s most authentic expressions.
Sigillo Platino is Acetaia La Bonissima's acclaimed Aceto Balsamico di Modena IGP. Produced from carefully selected grape must and patiently aged in ancient barriques, it develops a natural sweetness, aromatic complexity, velvety texture, and a harmonious balance between richness and acidity.
It is a perfect representation of what great aged balsamic should be, and one of the rare few IGPs to earn the Riserva designation -- a distinction reserved for those that surpass the standards of the category.
